Bacon, Egg and Tre Stelle® Bocconcini Breakfast Bowls

These adorable and cheesy baked eggs are perfect for breakfast or brunch!

Ingredients:

6 small crusty round dinner rolls 1 tub | 200 g Tre Stelle® Bocconcini Medallions, drained 6 slices bacon, cooked and crumbled 6 large eggs 6 cherry tomatoes, cut into halves salt and pepper to taste

Instructions:

Preheat oven to 375ºF (190ºC) Cut the tops off of rolls and scrape out the middle. Wrap each roll in aluminium foil (to prevent the rolls from overcooking), leaving top exposed and place on a baking sheet. Layer slices of Bocconcini Medallions and crumbled bacon equally among the bread bowls. Carefully crack an egg into each bowl, top with two cherry tomato halves and season with salt and pepper. Bake for approximately 25 minutes; or until eggs are cooked to your preference.
